Salt-rising Bread

While you are in Cuba, make sure to try the “Salt-rising” bread. Its origin comes from 1882 when there was considerable interest in developing the oil industry in the town of Genessee. The workers were finding local accommodations in the few homes adjacent to their work and the bread provided in their dinner pails was of a variety quite different from what they were accustomed to and was not a favorite! But having no choice, they got used to it and the name and tradition passed on.
The bread rises because of bacteria and not yeast, giving it a cheese-like flavor.
